2. Healthy Breakfast Smoothie
Living in Texas I know the seasons all too well and before I can bat an eyelash we will be sweating at six in the morning. Therefore, it’s important for us to have a good blender and a smoothie recipe that will keep us coming back for more.
This is one of those recipes, and don’t be scared by the spinach, you won’t even taste it. My other suggestion is if you, like me, get stomach aches from whey protein, then opt for soy protein instead. Your tummy will thank you.

3. Omelette in a Mug
This recipe won my students over last year and I think it will you too. What makes it so great is that it is totally customizable. I had two groups that got to pick out what they wanted in their omelets (I had the options laid out for them when they came in). Each group picked, put it in with two eggs and microwaved it until finished.
Then they put it on a plate and ate some of their creation. Several of them even shared with one another, getting to try the other group’s creation. It was a great experience for everyone involved.
And you can make it too. Just have the ingredients ready to go, crack the eggs, put it in a mug for about two minutes and then take your cup and a fork and head out the door. Wa-la!
